Liqueur’s

Cream drinks are popular in todays mid priced restaurants. They are promoted as after dinner drinks. They are very sweet, creamy and generally contain total of one ounce of low proof liqueur. Liqueurs are usually very sweet, colorful and have a descriptive flavor. Cream drinks must be shaken or blended to produce a well mixed drink. These drinks can be made with ice cream and are usually served in a cocktail or saucer chamapagne glass.

Their alcohol content is usually in the 40 to 60 proof range. By law, a liqueur must have a sugar content of at least 2.5%. Proof may be used as a general rule of thumb, but approximately 15 to 20% of liqueurs will float out of sequence. Remember the absolute rule that determines which liqueur floats on top of another is the specific gravity of the liqueur. this is caused by the weight of the liqueur offsetting the lightness of the alcohol content.
