Tequila

Tequila is a distillation of the fermented juice of the blue agave plant. The liquor must be made3 in Mexico to be called tequila. By Mexican law tequila must be distilled from ta minimum of 51% blue agave. The best tequila is made from 100% blue agave. Tequila is traditionally served “neat” as a shot.

The fruit of the blue agave is rfetrfto as a “pineapple. These “pineapples” are harvested whenthey reach thir peak. they are then oven baked and ground to a pulp. This pulp is then fermented and double distilled. White tequila is bottled with no aging, while god tequila is aged at least one year. “Anejo” tequila is aged at least 3 years in small oak barrels.

The finest tequila is like barndy or cognac. it is rated by the quality of the fruit it is distilled from. The finest agave is grown around the are of Jalisco, Mexico. tequila is to mezcal, as cognac is to brandy.

Mezcal is a lower quality type tequila. Mezcal traditionally is made from the mezcal plant as well as many different species of cactus, rather than from the high quality blue agave. mezcal is still bottled with blue agave worm in the tradition of the 1800’s.
